Boozy Barbie! Four Pink Cocktails To Make Right Now

At the time of writing, every Millennial around the world is currently living their absolute best life revelling in the height of 90s nostalgia. In case you missed it, a small cultural phenomenon in the form of the Barbie movie has landed across screens this summer, and subsequently everywhere you turn, the town’s been painted pink.

From official partnerships with the likes of Propercorn, OPI nail polish, and ASOS to turning the London Eye pink, it’s hard to escape the sea of fuchsia that’s filling up our feeds. And drinks are no exception. Think pink lemonade, beetroot powder, raspberry gin or Tequila Rose - pink’s a colour that’s no stranger to the world of kitsch cocktails.

We just couldn’t resist jumping on the bandwagon with this one, so here are a few of our favourite ways to drink it pink below:

You can’t go wrong with…a classic Cosmopolitan

Classic Cosmo

30ml Vodka

30ml Cranberry juice

30ml Fresh lime juice

30ml Cointreau

  • Combine all ingredients in a cocktail shaker over ice, then shake vigorously.

  • Strain into a chilled coupe and garnish with a slice of lime.

You’ll be right on trend with… a Flora Dora

Penrhos Flora Dora

50ml Penrhos Wonky Raspberry

1 x Lime

25ml Penrhos Blueberry Liqueur (or alternative fruity liqueur)

Ginger Ale

  • Muddle 5 raspberries in a highball glass. Add 25ml freshly squeezed lime and 50ml Penrhos Wonky Raspberry.

  • Add 25ml Penrhos Blueberry Liqueur and top with ginger ale.

  • Garnish with fresh raspberries.

Tip: freeze any leftover raspberries for future cocktails at home.

You can indulge in true 90s nostalgia…with a Strawberry Daiquiri

Pink Strawberry Daiquiri (Makes 2)

500g strawberries

200g ice

100ml rum

½ lime, juice

2 tbsp sugar syrup

  • Blend the strawberries in a blender or food processor, then push through a fine sieve to remove the seeds. Return to the blender.

  • Add the ice, rum, lime juice and sugar syrup. Tweak the amount of sugar syrup to your own preference. Blend again until smooth.

  • Pour into two chilled cocktail glasses and garnish with half a strawberry on the side of the glass.

If you’re drinking dry then try…homemade pink lemonade

Homemade Pink Lemonade

450g Raspberries

200g Golden caster sugar

200ml water

Lemon juice from 3 lemons

300ml Lemonade

Raspberries for garnish

  • Place the raspberries, golden caster sugar, water and freshly squeezed lemon juice in a large saucepan, then bring to the boil. Let it cook for around 3 minutes, and then remove to cool. Pass the syrup through a sieve to remove any seeds.

  • Pour 50ml of the syrup into a highball glass over ice, then top with lemonade and raspberries to garnish.
