Kuba Winkowski Opens Kubarn

Kubarn opens at the end of the month

Craft Guilds National Chef of the Year 2019 and renowned for his approach to game, fish, local Cotswolds and foraged ingredients, Chef Kuba Winkowski has created the ultimate intimate dining experience for lovers of food cooked over fire and smoke.

Kubarn is a magical log cabin, designed by Kuba for comfortable dining year-round, with seating for just four or five people at a time, which has been built in Kuba’s garden at his home in Bourton on the Water in the Cotswolds,

The first event at the newly-built Kubarn will be a Wagyu beef fine dining dinner on Friday 29th November, and for those who can’t grab a seat for this date, Kuba will be taking bookings and creating new menus for parties of four or five for dinner on Friday and Saturday, or other days on request.

Previously head chef at the Feathered Nest Inn, Kuba has set up his own operation including private catering and will be collaborating with leading chefs around the country including this year’s National Chef of the Year Steve Groves of Roux at Parliament Square. Kubarn has been designed as a pop up over the next few months, ahead of opening his own restaurant in the area.

The Wagyu menu, with meat supplied by Freedown Food, is £100 for five beefy courses plus canapes, a glass of  Gusbourne English Sparkling wine on arrival, tea and coffee.

Dishes include flank tartare with caviar, beef marrow focaccia with cultured butter, tri-tip bresaola with rocket and raspberry vinegar, ribeye BMS 5, Rosol, noodles and egg yolk.  Even the dessert features wagyu – apple and wagyu fat tart Tatin
