Hugh Stanley’s first debut restaurant, Stanley’s, opens its doors with Head Chef MasterChef the Professionals finalist Olivia Burt at the helm.

Under the leadership of Head Chef Olivia Burt, Stanley’s will focus on British seasonal produce showcasing the best of British ingredients in a relaxed contemporary style. Stanley’s offers a carefully curated wine list put together in partnership with one of Chelsea's oldest and favourite wine merchants Lea & Sandeman. The list reflects a traditional offering of old-world classics, with authentic terroir wines available in each category.
Highlights include Stanley’s collaboration label with English Sparkling producer Coates & Seely and their NV wines, along with fantastically good value Claret available at the top end of the list. There is also a cocktail menu serving favourites including bellinis, passionfruit martini, espresso martini and the house special Stanley’s elderflower Collins.
Menu highlights include small plates of Whipped Smoked Cod Roe, Buttermilk Flatbreads, Beef Tartar, Picked Shallots, Smoked Egg Yolk and Westcombe Cheddar Doughnuts, Burnt Leek.
Having trained at Ballymaloe Cookery School in Cork, Ireland, and Paris’s Le Cordon Bleu, Olivia completed her culinary studies and took a job at Joel Robuchon on the Champ Elysees in Paris, where she worked for a year before becoming a private chef. Olivia then returned back to London working at Claridge’s in Mayfair, starting out as part of the team for Simon Rogan’s Fera for 3 years before remaining at the hotel as sous chef.
Whilst fulfilling her role at the hotel, in early 2019 Olivia made the finals of the prestigious Roux Scholarship, the only female chef to do so in 4 years. At the age of 23, Olivia competed in BBC’s MasterChef: The Professionals 2019.
Stanley’s restaurant & bar includes a large outdoor courtyard, orangery style dining area and private dining room and will be serving seasonal British food, wine and cocktails.
