Recipe: Vegan Charred Broccoli Flatbreads

A delicious vegan option for a healthy afternoon snack. Simple to prepare, this dish makes for a tasty afternoon alternative to another raid on the biscuit tin or a delicious finishing touch to any BBQ spread.

  1. Mix the Greek yoghurt with the tahini and lemon zest, season and set aside

  2. Heat a dry griddle pan over high heat until extremely hot (or use your BBQ)

  3. While the pan is heating, toss the broccoli and green beans with half of the melted FLORA, and season well

  4. Place the broccoli and beans on the griddle pan or BBQ and cook until softened and charred, set aside for later

  5. Brush the flatbreads with FLORA and place them into the griddle pan or BBQ (you may need to do this in batches)

  6. Flip them once, leaving distinctive charred marks on them

  7. To serve, spread a big dollop of the sesame yoghurt onto each of flatbread, top with the charred broccoli and green beans. Squeeze a little lemon juice over each of them, then scatter the sesame seeds, pomegranate seeds and coriander on top

  8. Serve on a big board in the middle of the table
