Luke Selby Joins Palé Hall as Chef Partner

Acclaimed chef Luke Selby has been announced as Chef Partner of Palé Hall Hotel in North Wales, beginning in January 2026. The five-star Relais & Châteaux property, set on the edge of Snowdonia, will enter a new chapter under Selby’s leadership, with an expanded vision for both food and hospitality.

Currently Executive Chef at Le Manoir aux Quat’Saisons, where he has worked under Raymond Blanc for the past three years, Selby brings a wealth of experience from some of the UK’s most prestigious kitchens, including Restaurant Gordon Ramsay and Evelyn’s Table (where he earned a Michelin star with his brothers, Nathaniel and Theodore).
In his new role, Selby will:
Lead the relaunch of Palé Hall’s fine dining restaurant (opening first half of 2026)
Oversee the hotel’s more informal, all-day dining
Curate the experience at The Hearth chef’s table, breakfast, events and room service
Direct the culinary programme at The Bryntirion Inn, a 300-year-old pub with rooms on the estate, offering elevated pub classics and Welsh ales
Selby will also oversee the wider guest experience, unifying food, accommodation, and events — including seasonal shoot hospitality. Joining him are his brothers Nathaniel and Theodore Selby, making this a family-led vision for Palé Hall.

Speaking on the appointment, Selby said: “Wales has an incredible larder, and my vision is to create dining experiences that connect the seasons, the local landscape and the spirit of this beautiful country. I want guests to leave with a true sense of the stories, people, and flavours that define Palé Hall.”

With further plans including a new wine cellar, whisky lounge, sculpture trail and wellness retreat, Palé Hall is poised to strengthen its reputation as one of the UK’s leading country house hotels.
