Housed within the elegant surrounds of The Stafford, one of London’s most iconic hotels, the restaurant signals an exciting new chapter for both hotel and chef. Previously known as The Game Bird, the space has been reimagined as a destination restaurant offering modern European cuisine rooted in Caines’ distinctive “terroir” philosophy – celebrating seasonal British produce while nodding to London’s global influences.

The menus will showcase the finest local ingredients, shaped around the seasons and sustainable practices. Diners can expect an à la carte menu that honours The Stafford’s heritage, featuring favourites such as the Stafford Beef Wellington and Brixham Dover Sole. For those seeking an elevated tasting journey, Michael Caines brings his signature creations to the capital for the first time, including dishes such as Warm Lobster Salad with cardamom vinaigrette and Pan-Roasted Brixham Turbot with shellfish chowder.

John McLean, Managing Director of the Stafford Collection, said: “MICHAEL CAINES at The Stafford represents a natural evolution for our hotel, bringing together our rich heritage with Michael’s culinary excellence. This collaboration reflects our commitment to unforgettable guest experiences in the heart of St James’s.”

For Michael Caines, whose restaurants have shaped Britain’s gastronomic landscape, this debut feels like the perfect fit. “I’m absolutely thrilled to be bringing my cuisine to The Stafford,” he shares. “This restaurant is a celebration of British seasonal produce, and together with Executive Head Chef Simon Ulph and the team, we’ve crafted something truly special.”

With The Stafford’s heritage dating back to 1912 and a guest list that has included wartime heroes and royalty, MICHAEL CAINES at The Stafford blends past and present into a dining destination of true distinction.

This September, St James’s gains not only a new restaurant, but a new chapter in London’s culinary story.
