Pan Pacific London is delighted to unveil SHIOK! (pronounced - shook), an innovative, Singapore influenced pâtisserie from the hotel’s acclaimed pastry chef Cherish Finden.
Located in Devonshire House, the 146-year-old building adjacent to the hotel and in the heart of Pan Pacific London’s estate, and designed by world renowned Tom Dixon Design Studios, SHIOK! will combine the traditional flavours of Finden’s childhood with her signature flare, bringing a taste of Singapore to London with her first standalone retail space, opening in June 2022.
Bridging the gap between tradition and innovation, the menu at SHIOK! will showcase Cherish’s remarkable skill and open the palettes and minds of Londoners to the wonders of Asian pâtisserie. Incorporating memories of baking with her grandmother, cups of tea with her grandfather and her childhood in Singapore, SHIOK! will elevate the traditional pastry offering with innovative, imaginative and irresistible indulgences imbued with Cherish’s unrivalled passion and energy.
Famed for re-defining the art of pâtisserie, Cherish is recognised as one of the world’s top pastry chefs, having worked in some of the most prestigious hotel kitchens in the world as well as becoming a household name as a TV Chef and international consultant. In 1991, Cherish discovered her passion for pâtisserie with her first role at the iconic Pan Pacific Hotel in Singapore, and has returned to the group almost 30 years later to take on the role of Executive Pastry Chef at Pan Pacific London, the first European outpost for the collection.
Cherish says; ’In Singapore the word SHIOK! conveys a feeling of pure pleasure and happiness and this is what I want to capture. The patisserie is going to be somewhere you will want to bring your loved ones, any time throughout the day for an out-of-this-world pastry. I’m so looking forward to Londoners experiencing what we have in store’.
Open from 7am to 6pm Mon-Fri and 10am to 6pm Sat-Sun, the 25 cover patisserie will serve breakfast as well as sweet treats throughout the day which guests can either enjoy in situ or to grab and go. Upon entering SHIOK! visitors will be greeted with decadent cake and chocolate counters, filled to the brim with delicious sweet treats. Key menu highlights will include a selection of Petit Gateaux which will feature Handbag - inspired by Finden’s mother always buying her mini handbags with classic flavours of lemon and raspberry compote; Chocolate TeaPot - influenced by the Chinese tradition of drinking from the smallest teapot which her grandfather always adhered to; Kopi Tarik - which will feature all the flavours of coffee complete with edible spoon and cup. SHIOK! will also serve a sensational signature pastry, to change seasonally.
Also available at SHIOK! will be a wide selection of chocolate bon bons with flavours such as coconut & gula malaka and matcha & yuzu; individual travel cakes, cookies in a tin and Cherish’s take on the Singaporean pineapple tart, a must in every household for Chinese New Year.
For breakfast guests can choose from Cherish’s Polo Buns, made using the traditional method to create a beautiful sweet yet fluffy milk bun with options including coffee, pandan and summer berries. For the savoury items Cherish has once again drawn inspiration from her childhood to feature a sausage shokupan, similar to a sausage roll, and pork floss buns. Classic Viennoiserie and croissants will also be available.
The drinks menu will feature the Singaporean staple, Bubble Tea, with SHIOK! hailed to offer a wide selection of flavours and colours. Also on the drinks menu will be a selection of fine Champagnes and wines alongside hot and cold beverages. For breakfast customers will also be able to design their own juices.
Available all day, for grab and go or to eat in, SHIOK! will open on 16th June at SHIOK!, Devonshire House, Bishopsgate Plaza, EC2M 4JX
