Indian cookery classes
KOKUM, the acclaimed Indian restaurant in East Dulwich, has announced the launch of an exciting new series of immersive cookery classes, running from April through to August. Led by Head Chef Sanjay Gour, the hands-on sessions will invite guests to explore the vibrant and diverse flavours of Indian cuisine, from making curries from scratch, to bread making, understanding Indian street food and BBQ’ing.

Chef Sanjay brings an impressive culinary background to the experience. Having grown up in Mumbai, he moved to London where he has worked in a number of Michelin-starred restaurants including Gymkhana and Murano by Angela Harnett where he played a key role in the opening. His breadth of expertise makes for an unforgettable afternoon of learning.
Each class is designed to focus on a different aspect of Indian cuisine, offering guests the opportunity to build confidence across a range of techniques and dishes. Highlights include:
Curry from Scratch: No Jar, No Paste, No Nonsense, where participants will learn to create a deeply flavourful, traditional on-the-bone chicken curry by mastering the balance of spice, heat, acidity, and sweetness.
Naan Stop: an Indian Bread Workshop where guests will discover the art of bread making, from soft, pillowy naan to flaky roti and perfectly charred flatbreads.
Build Your Own Street Food Feast explores the bold, playful side of Indian cooking, with hands-on preparation of chaat bowls, pani puri, Bombay toasties, and vada pav, alongside an introduction to chutneys, textures, and flavour layering.

For the summer months, KOKUM will also host two outdoor-focused grilling sessions, KOKUM Summer Grill-Out: Smash, Sear & Spice and KOKUM Summer Grill-Out: Wings, Fire, & Fish. These classes will guide guests through the fundamentals of cooking over live fire, unlocking rich, smoky flavours, and confident grilling techniques.
Following each class, participants will sit down together to enjoy the dishes they have created. Each guest will also receive a thoughtfully curated goodie bag, complete with the essentials to recreate the dishes at home.

Sushi masterclasses
Hosted for the first time at Sticks’n’Sushi Battersea within the striking surroundings of the Power Station, these immersive, chef-led sessions are open to all skill levels and offer a closer look at the precision and technique behind some of Sticks’n’Sushi’s signature rolls.

Each evening will begin with a glass of Prosecco, salted edamame and sake to set the tone. Guests are then guided step-by-step by expert chefs through the making of a selection of signature dishes, including Kappa Maki (cucumber hosomaki); Crispy Ebi (tempura shrimp, avocado, spicy sauce and sesame); and Shake Aioli (snow peas, avocado, miso aioli and cucumber, topped with seared salmon and trout roe). The session concludes with guests sitting down together to enjoy their creations, served with miso soup and fresh lemonade.

The masterclasses run for 60 - 90 minutes and is kept intentionally small to ensure plenty of one-to-one guidance, bringing together learning and dining in a relaxed social setting, rooted in the Japanese concept of omotenashi - wholehearted hospitality and care for every guest.

Olive oil masterclasses
Hosted by Citizens of Soil founder and certified olive oil sommelier Sarah Vachon, these intimate 90-minute masterclasses explore the world of extra virgin olive oil - from what truly makes an oil “extra virgin” to tasting techniques, flavour profiles, nutrition and Mediterranean food culture.
Guests will taste a minimum of three oils ranging from delicate to robust, learning how climate, harvest timing, olive variety and processing methods shape flavour. Each session also includes savoury and sweet pairings designed to showcase the versatility of extra virgin olive oil.

Tuesday 9 June: Nutrition & EVOO Masterclass with Dr Jenna Macciochi
At this exclusive olive oil and nutrition masterclass, Dr Jenna Macciochi will join Sarah to cover the wider context of Mediterranean-style eating patterns and how best to incorporate EVOO into your diet. She’ll also speak to the myths surrounding cooking with extra virgin olive oil, and the important differences between food traditions and trend-led wellness behaviours—including the viral EVOO shot. Guests will also have the option to purchase a signed book bundle featuring Immune to Age and Drizzle.
Wednesday 17 June: Classic EVOO Masterclass
The signature Citizens of Soil tasting experience, covering the fundamentals of tasting, sourcing, flavour and Mediterranean food culture.
Tuesday 23 June: Wine and EVOO Masterclass with Naked Wines,
Showcasing three olive oils and three wines, our sommeliers will be talking terroir, varieties, and food pairings.

Spirits blending classes
Tucked beneath The Whisky Exchange’s Borough High Street store, London Bridge Distillery School offers a series of immersive blending experiences.

For whisky fans, their introduction to the art of blending whisky sees guests guided through the tasting of blending samples and how to select different components to use in their own unique blend of whisky, combining different styles of whiskies aged in various cask types. Guests take their own personalised blend home after the session.

For dads who enjoy gin, the distillery school offers the opportunity to create a unique gin from scratch with a range of carefully sourced botanicals. Following a delicious welcome cocktail, participants are invited to learn all about how gin distillers craft the perfect spirit. Each guest then has the opportunity to distil their own on our bespoke mini pot stills, leaving with a 50cl bottle of gin per person.

For rum fanatics looking for a chance to discover the diverse and fascinating spirit that is rum, guests for the rum blending class will be able to sample a variety of different pot and column distilled rums from the Caribbean and South America, and learn the complex art of blending, all under the careful guidance of the expert hosts. At the end of the class, guests will take home a bottle of their own signature blended rum creation.
